-Keep Plate Count Sheet. This is how we count how many breakfasts we serve and accuracy is very important!
-Record 6 take-out bagged breakfasts on the sheet.
-Replenish as the plates get low in batches of 10 or 20.
-Note on the sheet how many plates you have placed at the window.
-Guests who would like seconds use a new plate.
-Start running the dishwasher as soon as there are dishes to be washed. Ideally, 3 people run the dishwasher: 1 to handle dirty dishes and 2 to dry and put away. The dirty dish handler may not handle clean dishes after they exit the dish washer. The clean dish handlers may not handle dirty dishes and then handle clean dishes without washing hands.
